House Blend Decaf Dark - Fair Trade Organic: Just like our Decaf Full City blend, our Dark Roast decaf is decaffeinated using the natural water process. This shade grown coffee - from Mut Vitz in Mexico and/or CAC Pangoa in Peru - is a deep, dark roast but without the caffeine.

 

 

Our coffees are decaffeinated using the natural water process. Here's how it works . . . The beans are cleaned and soaked in water partially saturated with coffee flavor solids to bring the flavor of the beans and the water into equilibrium. They are then immersed in the flavor charged water, where only the caffeine - because it is not in equilibrium with the water - diffuses from the beans into the water, leaving the flavor intact. The water continues to flow through a carbon filter that traps caffeine and back to the beans until they are 99.9% caffeine free
