The honey process removes the skin and the bulk of the fruit of the coffee cherries. Afterwards the beans are dried naturally without the traditional washing process. The remainder of the fruit left on the beans gives them a taste similar to a natural-processed bean, but with a pronounced sweetness and less acidity.
