Based in Chiapas, Mexico, Maya Vinic is composed of 656 farmer families who joined together after the 1997 Acteal massacre that took the lives of 45 of their community members. Inspired by the traditions of their ancestors, Maya Vinic operates with a respect for local language and culture, and a reverence for Mother Earth and traditional forms of self government. Farmers are based in the municipalities of Chenalhó, Pantelhó and Chalchihuitán.Cafe Campesino began sourcing coffee from Maya Vinic in 2002, when the cooperative exported its first container of coffee under fair-trade terms. We have always been inspired by the resilience, diligence and commitment to community Maya Vinic farmers have shown. In the past 17 years, we have seen the quality of Maya Vinic coffee excel, while cooperative leadership remained committed to getting more money back to farmer members. Maya Vinic now roasts and sells its coffee throughout Mexico, as well as from its own coffee shop in San Cristobal de las Casas.

Grind Types
Whole Bean-- While we are happy to grind your beans, your coffee will stay fresher longer if you grind it as you go. There are many great home grinder options out there and many are surprisingly inexpensive.
Drip-- This is a medium grind that is the most versatile. Brewing methods using drip include home coffee drip machines, pour-overs (like Hario), Chemex, and AeroPress.
Espresso-- This grind is generally used for espresso makers. This includes home machines and stove-tip espresso pots. The grind is the most fine and is optimized to work with a high pressure extraction system.
Coarse-- Coarse is for percolators, french press, cold brewing, and sometimes AeroPress. Coarse is the biggest/loosest grind and enables water to move more freely steeping coffee for extraction.
All of the above, while generally true in the industry, also should be adjusted for preference. Feel free to experiment and please contact us if you have questions and we will be happy to work with you.

Repeat purchase for several years. Only reason not 5 stars is wish it was a bit stronger. Smooth and easy to drink

5 Mexico Chiapas

This coffee is wonderfully delicious! I chose this single origin bean due to it coming from Chiapas. I've had coffee from Chiapas before, and it is always exquisite. Café Campesino's Chiapas bean is also exquisite. It's a sublime way to start my day!

I am enjoying it but wonder whether it would benefit from a lighter roast.

This coffee is absolutely delicious _ smooth, but plenty of richness and body. It has become our go-to coffee, and my husband and I rarely drink any other kind.
