We have recently adjusted our grind options. With that in mind, we wanted to offer this primer so that you can choose the best grind-style for your preferred brewing method.

Whole Bean-- While we are happy to grind your beans, your coffee will stay fresher longer if you grind it as you go. There are many great home grinder options out there and many are surprisingly inexpensive.

Drip-- This is a medium grind that is the most versatile. Brewing methods using drip include home coffee drip machines, pour-overs (like Hario), Chemex, and AeroPress.

Espresso-- This grind is generally used for espresso makers. This includes home machines and stove-tip espresso pots. The grind is the most fine and is optimized to work with a high pressure extraction system.

Coarse-- Coarse is for percolators, french press, cold brewing, and sometimes AeroPress. Coarse is the biggest/loosest grind and enables water to move more freely steeping coffee for extraction.

All of the above, while generally true in the industry, also should be adjusted for preference. Feel free to experiment and please contact us if you have questions and we will be happy to work with you.

Product Overview

This excellent French Roast, produced by PROCOCER, features vanilla and tobacco notes with a medium acidity and a deep, robust finish.

PROCOCER grew out of the Nicaraguan Small Farmers and Ranchers Union (UNAG) initiative to provide intensive technical assistance to individual, organic coffee producers in the municipalities of Jícaro, Murra, Ciudad Antigua, San Fernando y Jalapa. From that first experience, 150 participants decided to continue working collectively and establish their own organization. PROCOCER members held their first general assembly in October 1999 and the Cooperativa de Servicios Multiples was formally registered. Today PROCOCER has approximately 600 members. Membership is open and voluntary; and the organization is controlled democratically with members actively participating in decision-making and policy making for the coop. Representatives are chosen from the farmer groups in their distinct geographical territories to participate in the delegates’ assembly, and required to report back directly to the communities they represent. In 2003, PROCOCER became one of the founding members of the Association of Cooperatives of Small-Scale Producers (CAFENICA) – which helps promote member-organizations’ coffee and gain support for business management projects. They also are part of the CECOCAFEN central coordinating union of coops, which is now their main source for pre-harvest financing, and export channel and quality control for their Fair Trade and organic green coffee. PROCOCER coffee is known for its consistently solid cup profile – bright acidity, full body and balanced with deep tobacco, sweet vanilla and soft fruit flavors.

    New Orleans residents, this is my husband's new coffee! My husband loves dark roast, so I bought this flavor for him to try. He absolutely loves it! I've already purchased a second bag for him!

    We drank Community Coffee Dark Roast from Baton Rouge, LA, for years (we had a standard mail order of 10 lbs every six weeks or so), but now wish to drink only organic , fair trade coffee, which they do not offer. We have tried 6 different organic coffee so far and the Nicaragua French Roast has been the best as far as flavor, after taste, and satisfaction. We continue to try others in our search, but we think we have found the one to replace our favorite CC Dark Roast. Thank you.
