We have recently adjusted our grind options. With that in mind, we wanted to offer this primer so that you can choose the best grind-style for your preferred brewing method.

Whole Bean-- While we are happy to grind your beans, your coffee will stay fresher longer if you grind it as you go. There are many great home grinder options out there and many are surprisingly inexpensive.

Drip-- This is a medium grind that is the most versatile. Brewing methods using drip include home coffee drip machines, pour-overs (like Hario), Chemex, and AeroPress.

Espresso-- This grind is generally used for espresso makers. This includes home machines and stove-tip espresso pots. The grind is the most fine and is optimized to work with a high pressure extraction system.

Coarse-- Coarse is for percolators, french press, cold brewing, and sometimes AeroPress. Coarse is the biggest/loosest grind and enables water to move more freely steeping coffee for extraction.

All of the above, while generally true in the industry, also should be adjusted for preference. Feel free to experiment and please contact us if you have questions and we will be happy to work with you.

Product Overview

PROCOCER grew out of the Nicaraguan Small Farmers and Ranchers Union (UNAG) initiative to provide intensive technical assistance to individual, organic coffee producers in the municipalities of Jícaro, Murra, Ciudad Antigua, San Fernando y Jalapa. From that first experience, 150 participants decided to continue working collectively and establish their own organization. PROCOCER members held their first general assembly in October 1999 and the Cooperativa de Servicios Multiples was formally registered. Today PROCOCER has approximately 600 members. Membership is open and voluntary; and the organization is controlled democratically with members actively participating in decision-making and policy making for the coop. Representatives are chosen from the farmer groups in their distinct geographical territories to participate in the delegates’ assembly, and required to report back directly to the communities they represent. In 2003, PROCOCER became one of the founding members of the Association of Cooperatives of Small-Scale Producers (CAFENICA) – which helps promote member-organizations’ coffee and gain support for business management projects. They also are part of the CECOCAFEN central coordinating union of coops, which is now their main source for pre-harvest financing, and export channel and quality control for their Fair Trade and organic green coffee. PROCOCER coffee is known for its consistently solid cup profile – bright acidity, full body and balanced with deep tobacco, sweet vanilla and soft fruit flavors..

    We subscribe and drink every morning.

    This is a true medium roast, and the roasty flavor doesn't overpower the coffee flavors, which are quite nice. We subscribe monthly and drink it every morning. Like all coffee, it is better if ground fresh. Being a relatively lighter roast, it requires more coffee per water than you might use for national and grocery brands, and there's likely higher caffeine content. When brewed strong with good water distribution, this is a very rich and fulfilling coffee. I also drink leftovers cold, and it is good cold too. Not to mentioning, supporting a Georgia small business.

    My Favorite Cafe Campesino Blend for 20 Years!

    This is the first blend I tried from Cafe Campesino nearly 20 years ago and I still love it. It's very smooth with a strong flavor and delicious aroma. I've tried others and have enjoyed them but the Nicaragua blend will always be at the top of my list.

    This is exactly the kind of coffee I want to wake up to in the morning. It is mild, rich and smooth. This is my first bag and I will definitely purchase again!

    Our favorite for 20 years!

    This single-origin coffee is our favorite! We prefer the medium-roast. The flavor varies a little year-to-year but its always good. One time I had a cup from a day old pot and it had taken on a mild chocolate flavor! Trying it again in the years after it isn't always so but I sure do remember it.
